Cheesy Corn & Zucchini Fritters

Recently I have been trying to get creative with my babies breakfast. I wanted something different to the usual porridge, overnight oats or scrambled eggs and so these delicious cheesy corn & zucchini fritters were born!

These are an excellent start to the day being high in fibre, protein and vegetables. Not only for breakfast though these fritters make a great snack between meals (make in advance they store well) or a quick dinner/lunch. I hope you enjoy these incredibly simple, nutritious and delicious fritters.


1/2 cup besan (aka chickpea) flour

1/2 cup water

1 zucchini, grated

Kernals from 1 fresh corn on the cob or 1/2 cup tinned corn

1 cup grated cheese (TIP self grate your cheese from a block as the pre shred stuff contains anti-caking agents)

Salt & pepper to taste


In a small jug whisk besan flour and water together until smooth and all lumps are dissolved. Expect this mixture to be quite watery, this is normal. Set aside and add to a bowl, grated zucchini, corn kernels, cheese and some salt and pepper. Give it a mix until combined. Pour in besan flour mixture and mix again. Heat a fry pan with some olive oil to medium heat. Add heaped tablespoons of mixture to pan, flatten out to make pancake sized fritters. Cook on this first side for about 1-2 min, gently flip fritters and cook on other side for 1-2 min. Place onto a plate and allow to cool. Serve and enjoy! These freeze well and also keep in the fridge for up to 3 days.

Serve these fritters to your babies by cutting into smaller pieces for self feeding babies. Mash really well for spoon fed babes and for older kids and us parents. Stack a couple, top with a fried egg and some avo - yum!
